Hintergrund:

Background: Symmetrically cleaves beta-carotene into two molecules of retinal. The reaction proceeds in three stages, epoxidation of the 15,15\\\'-double bond, hydration of the double bond leading to ring opening, and oxidative cleavage of the diol formed.
