Application Note: One unit of Lysozyme (Hen Egg White) is equal to a decrease in turbidity of 0.001 A450 nm per minute at 25° C, pH 7.0, using a 0.3 mg/mL suspension of Micrococcus lysodeikticus cells as a substrate. Lyophilized powder contains trace amounts of sodium chloride.

Background: Lysozyme is a from a family of enzymes that act upon glycoproteins in the cell walls of bacteria. Lysozyme is a highly abundant protein in a variety of secretions: tears, saliva, milk, and mucus (in mammals). The whites of avian eggs are also an abundant source of lysozyme.
